Red Wines and the French Paradox
In 1991, the television show 60 Minutes aired a special that discussed the French Paradox, and concluded that red wines decrease cardiac disease occurrences. Within a few weeks, the consumption of red wines across the United States went up nearly 50 percent. The increase was so dramatic, in fact, that many wineries requested their products be labeled as “health food.”
What is the French Paradoz? Well, “French Paradox” is a term that was created by a scientist from the Bordeaux University in France named Dr. Serge Renaud, who noticed that French citizens as a whole had low occurrences of coronary heart disease… despite having a diet heavy in saturated fats.
There are a lot of theories as to the reason for the French Paradox. Some credit the climate. Some credit the lifestyle. But the most commonly accepted explanation is that the main factor in causing what is known as the French Paradox is a high consumption of red wines.
Specifically, many believe that it is the phyroalexin known as resveratrol that lowers the chance of coronary heart disease. Resveratrol can be found in both red and white wines, and has been credited with playing a vital role in the French Paradox.

New Wines From Herzog Wine Cellars

The Herzog Wine Cellar recently announced the release of a new wine, the 2007 Herzog Single Vineyard Cabernet Sauvignon from the Haystack Peak Vineyeards. This three-year-old Herzog wine demonstrates exactly what this winery likes to refer to as the “art of the vineyard.”
Herzog winemaker Joe Hurliman takes great pride in his facility, which spends a great deal of energy in keeping with the “small-lot winemaking” style they’ve exemplified, despite having facilities capable of producing massive quantities of wine.
“The most exciting aspect (of wine making) to me is really allowing the wine to evolve freely… to let the wine ‘speak’ and shape the process,” Hurliman was quoted as saying in a recent Herzog Wine Cellar Newsletter. “It’s really a conversation to me, between myself and the grapes.”

Chilled Red Wines? Really?
Well, so far here in onlinekosherblogland, we’ve posted about our love for rose wines and white wines, so it may not surprise you that today’s post will be about the most classic of all classics: red wines.
But, as you may have noticed, it’s summertime! Do you want something hot to drink? No. Something tepid, perhaps? Not really… Something cool and refreshing that will revive your spirit, stir your soul and go hand-in-hand with outdoor grilling? Yes, please!
Yessir, in honor of these dog days, we’re going to focus on the red wines that benefit from being served chilled.

In This Heat, When We’re Not In The Pink, You Know We’re Drinking White Wines
Ah, white wines. How crisp, clean, minerally, and citrusy you are! And is that a hint of vanilla I detect? The scent of pineapple, as if I were standing on a beach watching a sunset, eating some pineapple?
Let us count the ways in which we love cool and delicious white wines. What is that magic number? Let’s see. And as we count, we’ll give you a brief primer to refresh your memory on the different types. (If you were here, we’d refresh your glass each time, too!) Remember, this is a very basic primer, just a few notes on white wines that can be incredibly varied and complex.
1. Chardonnay: honey, citrus fruits, vanilla.
2. Chenin Blanc: some are dry and crisp, while others have a touch of sweetness.
3. Pinot Gris (or Grigio): light, fruity, slightly spicy, fresh, crisp.
4. Riesling: often slightly sweeter, with high acidity, grapefruit, honey, and nectarines.
5. Sauvignon (or Fume) Blanc: light, refreshing, hay, fresh herbs, and smoke.
6. Gewurztraminer: pungent, cinnamon, clove and nutmeg.
7. Viognier: subtle floral notes, fruit forward.
We could probably go on, actually, so much do we adore chilled white wines, especially in the dog days of July, but we’re getting a little tipsy, and, we admit, a little thirsty for more…

Summertime, The Season For Dry Rose Wines
We’re beginning the blog in the summertime, in the highest heat wave to hit the Northeast US in 9 years. In NYC, we’re seeing triple digits on our thermometers. Only three days have been warmer than yesterday since 1870. It’s hot, folks.
So, naturally besides dunking our heads in ice water, we’re thinking about dry rose wines. Thinking is kind of a tame word, actually. Dreaming is closer. Craving captures some of the urgency…
But summer also brings the one thing that competes with rosé wines in our affection, that briefer-than-even-rosebuds orb: the tomato. Many of them, actually. Armies of them. The rest of the year, they’re pink cardboard, come summer, they’re our bright heaven.
Trouble is, not that many wines pair well with fresh tomatoes.
Here’s where we get really, really happy. The perfect wine for pairing with summer’s juciest fresh tomatoes?
Dry rose wines, with the earthy, spicy, fruitiness of red wine and the crispness of white, set off sweet, zippy tomatoes in every way.
The menu in our home is going to be variations on this theme for the foreseeable future. Tonight, a French tomato tart and a dry rose wine sure to be both rich and refreshing. Dinner will start early and end late. You’re invited. Want to know what to bring?
